Tofu Rice Bowls with Peanut-Ginger Sauce

These became a weekly favorite when we realized that the kids will eat more if we give them the choice of what goes in their bowl. This is how they snack at Rocky Mountain, our daughter’s pre-school. The importance of independent choice is highly regarded and we have seen the effects of this concept with our littles. Putting out bowls of choices for a deconstructed meal gives them the power of putting it all together. Totally worth the extra dishes.

We are big meat eaters so we do tofu for a light change of pace and leftovers make great lunches. This sauce goes great with chicken or just veggies. Tailor them to your family favorites by making yours with any protein, veggie and grain. This Peanut sauce is addictive so I highly recommend doubling the recipe since it goes great on everything.


Peanut Ginger Sauce

5 tablespoons peanut butter

2 tablespoons rice vinegar

4 teaspoons of soy sauce

1 tablespoon of brown or coconut sugar

1 heaping teaspoon of finely grated ginger (I use my zester)

4 tablespoons of warm water

Combine ingredients and whip until smooth. Put on top of everything.


Crispy Roasted Tofu

2 packs of Tofu ~ slice into cubes and press out as much moisture as possible

2 Tablespoons of oil ~olive, sesame or avocado

3 Tablespoons of Soy Sauce or Tamari

1 teaspoons of garlic granules

1/2 teaspoon of ground ginger

2 tablespoons of arrowroot starch or flour

black pepper to taste

Preheat oven to 425 degrees. Press as much moisture out of the tofu cubes and then combine with oil, tamari, garlic, ginger and black pepper and marinate until ready to bake. Mix in starch and spread in one layer on rimmed baking sheet. Bake for 30 minutes flipping once about halfway through.


Roast your favorite veggies or whatever you have in the fridge by tossing with a little olive oil, salt and pepper. I roast my veggies with the protein and make the rice and sauce while they are in the oven for a quick 30 minute meal. Serve with favorite hot sauce, seeds, braggs, soy sauce, seaweed, edamame, etc… The options are endless and everyone leaves satisfied having made their own perfect version in their bowl.
